Amarone’s Passito has ancient origins: in the 4th century A.D. Senator
Flavio the Great Aurelio Cassiodoro described it as a sweet wine “royal by color… thick and meaty.” In Italian culture it is customary to taste this nectar on special occasions or with guests of respect. We wanted to keep the alcohol level no higher than 14 degrees so as not to weighting it. The difference with Amarone is the interruption of fermentation before sugars convert to alcohol. The bouquet is fruity and intense with a high variety of facets and scents. You should taste it cold and is ideal for meditation and relax.
