Preparation 30‘ – Coking time: 20‘

Donna Cristina recommend to savor it with: Müller-Thurgau D.O.C.– Sauvignon D.O.C. – Lugana D.O.C.– Malvasia Bianca I.G.P.

Ingredients for 4 people

320g rice
50g beef paste
80g butter
50g onion
100 ml meat broth
1 pack of saffron
1 Saffron Stamp Recording
60g grated Parmesan cheese
Salt and black pepper

Put in a saucepan half the butter and the onion
Cook over medium heat and bring onion to sweat
Add the rice for 1 minute
Add the white wine until it evaporates,
Add crumbling beef marrow
Cover the rice with the broth and cook.
Five minutes before the rice is “al dente”,
Add saffron, salt,
Once “al dente” add the rest of the butter and saffron

Vegetarian version:
Coconut butter instead of butter
Use vegetable broth
Use a little more white wine
Use chopped nuts instead of Parmesan cheese
