Our GOURMET PLATINUM extra virgin olive oil is an oil of the highest quality, obtained from olives through exclusively mechanical cold pressing processes at temperatures below 27 °C, which do not cause any alterations.
It is also characterized by an acidity that, according to the law, cannot exceed 0.8 grams per 100 grams: this parameter indicates the amount of free oleic acid in the product. It is therefore a pure oil with well-defined chemical and organoleptic properties in terms of color, smell, texture and flavor – the typical spicy note that is a sign of the richness of polyphenols with antioxidant action – and with incredible properties.
This olive oil is extremely concentrated: 100 kilos of olives give us 10l of olive oil.
In general, there is increasing evidence that the regular consumption of extra virgin olive oil can act as a protective barrier against chronic degenerative diseases, such as cardiovascular diseases, but also type 2 diabetes, cancer, obesity and Alzheimer’s.An effect that is the result of the combined action of monounsaturated fatty acids and antioxidants, which protect DNA from the harmful effects of oxidative stress caused by free radicals, as well as an action to fight inflammation and modulate the immune response.
Some research suggests that extra virgin olive oil may have a specific protective effect against the inflammatory response that characterizes immune-mediated chronic inflammatory diseases such as rheumatoid arthritis, inflammatory bowel disease (e.g., Crohn’s disease and ulcerative colitis), multiple sclerosis, systemic lupus erythematosus, and psoriasis.
These pathologies have as a common basis an alteration in the immune defense, which, due to these dysfunctions, is prompted to attack its own tissues. Thanks to the content of phenolic compounds with antioxidant, anti-inflammatory and immunomodulatory properties, extra virgin olive oil would be able to improve the symptoms of these diseases and act both locally and systemically.
